The graph above shows the effect on blood glucose levels of consuming medium and low GI foods compared to a glucose reference standard. The effect of the glucose standard is dramatic with a rapid elevation of blood glucose levels reaching a maximum of 4 mmol/L 30 minutes after consumption followed by a decline to baseline levels after 2 hours. The maximum blood glucose levels produced by the medium (3.3 mmol/L) and low (1.1 mmol/L) GI foods are both lower than the glucose standard thus reducing the area under the curve which is used to calculate GI.
