RSSL's Carole Bingley, Fred Gates and Mark Auty will be speaking during Fi Global Connect's Plant-Based Ingredients in the Spotlight, running 13th - 17th September.

Carole's presentation, "How to overcome the challenges when developing vegan dairy alternatives?", will be held Monday 13th September from 1pm - 1.30pm and will consider the dairy alternative market and the influence of plant proteins and other ingredients on product characteristics. There will also be an overview of ingredient selection and the impact these have on product functionality, the tools available to assess new vegan product performance and the powerful analytical techniques that can be utilised, including texture analysis and microstructural characterisation.

Fred and Mark's presentation, "How physical and microstructural insights can enhance consumer experience of plant-based foods" will follow on Tuesday 14th September, 12.00pm - 12.30pm. This presentation considers the challenge of producing texture and flavour attributes for vegan products. Fred and Mark will share their knowledge and explain how science is used to inform ingredient choice, using a vegan sausage as an example.

This dedicated online event will provide a platform for manufacturers of plant-based products and suppliers of ingredients to connect and do business regardless of location, over five days.
