RSSL’s experienced consultants began by assessing the client’s current allergen management practices and allergen risk analysis process documentation. We then visited the site to evaluate how these procedures were being implemented across the operation; from supply chain quality assurance and new product development to the full production process, delivery and storage of materials, management of labelling (including application of packaging), sanitation, internal audit programme and training.
This extensive review involved observing and talking with multiple operatives to deepen our understanding, rather than relying on the theory alone. With this on-the-ground perspective, we were also able to assess the food safety culture which is fundamental to the success of allergen management strategies in practice.

We identified several opportunities for operational improvements and made practical suggestions for how they could be introduced within commercially viable parameters. Our suggestions focused on changing how risk was assessed, as well identifying robust controls to reduce the likelihood of risk occurring.
RSSL’s experienced allergen testing team validated these evidence-based controls and carried out extensive analytical testing to ensure cleaning practices were effective and would not result in cross contamination during product changeover. At the same time, our physical validation of controls in areas considered high risk, such as selecting materials, weighing multiple dry ingredients and issuing packaging to the line, ensured the system and / or people tasked with that responsibility would prevent the wrong thing from happening.
